Professor Wayne Iwaoka of the College of Tropical Agriculture and Human Resources (CTAHR) Program at the University of Hawai'i at Manoa challenged his students to develop value-added food products from the culls of locally grown goods. Working together with Hawai'i's own Aloha Tofu, a "melt-in-your-mouth" shortbread cookie was created by utilizing okara, a by-product of tofu manufacturing.

Kulanui products are researched and developed by students and staff at the University of Hawai'i and proceeds continue to fund current and future projects.
